Banana Cream Pie

 TIME: 4 hr (rest for 3 hours) INGREDIENTS: 1 pack Nilla wafers or gluten free option (or Nilla wafer crust if available) Warm soften butter or ghee 6 ounces cream cheese softened (I used reduced fat) 1 can 14 ounces sweetened condensed milk ¾ cup cold water 1 package 3.4 ounces instant vanilla pudding mix 1 cup heavy whipping cream whipped (just whipped, DO NOT add any thing else to it) 2 medium bananas cut into 1/4-inch slices 2 teaspoons lemon juice 1 cup fresh blueberries additional blueberries for garnish optional METHOD If Nilla wafer crust is not available, crush a packet of waffers. Spread warm soften butter even on crust and place in the oven for quick heating. Let cool in the fridge while the preparing filling, it needs to be strong enough to hold when serving the pie.  In a large bowl, beat cream cheese until smooth. Pumpkin Pie

 TIME: 2-5 days. Finished pie will need to be covered, overnight (8 hours minimum). Ideal to make crust and ganache which can keep for 2 day. The fresh whipped cream tastes best with a 1-2 days to sit. Pumpkin Ganache Salted Dulce de Leche Pie Crust Whipping Cream Streusel ASSEMBLY Pour room temp (or slightly reheated) caramel into the base of the pre-baked pie shell so the base is fully covered and level. Place the filled shell into the fridge to firm up for 20 - 25 minutes. Pour ganache over caramel and quickly spread using offset spatula or spoon to make sure all caramel is covered with ganache. Place pie in the fridge ASAP, covered, overnight (8 hours minimum). Ganache should feel firm to the touch, should not stick to your fingers, and feel solid all the way through. Serve pie cold, directly out of the fridge. Top with fresh whipped cream or streusel to serve.

Beef Shin (Beef Shank) Ragu

 TIME: 1-3 days INGREDIENTS: 1.5 kg beef shin, bone in (beef shank cross cut). Make sure to get bone-in. It will have a large round bone in the middle. If you need to cook more meat, add wine and broth or stock to cook down for 11 hours. Grapeseed oil, for frying 6 cloves garlic, crushed 1 large onion, diced 1.5 cups diced carrots, diced 2 celery sticks, diced 3 sprigs of rosemary 1 cinnamon stick (if 1 powdered cinnamon use 1 shake at end) 2 bay leaves 3 anchovy fillets 2 400g tins of plum tomatoes (I used 28oz can of SMT Whole Peeled Tomatoes) 2 cans of tomato paste. This adds a nice layer of flavor and a bit of sweetness. 1-2 bottle of red wine, reserve 1/4 of wine for reduction Micro greens INGREDIENT ADD I replaced the beef shin with stewing beef, and this will only need 4 hours. 3/4 of the wine. 1 All spice 1 t sherry vinegar 2 bottles of wine Demi-glace .
